Here's the scoop. So there's no inspiration behind this recipe besides the fact that I realized I had 3 tubs of non-fat Greek yogurt in the fridge. Two were half open and the third one I had just bought for Rob since he's the one who usually eats it as a snack. So in order to get rid of some I decided to make a quick batch of protein muffins. They turned out to be a great muchin' snack in between my meals I have throughout my long busy day at work.
For this recipe I used: 1 cup oat flour, 1 cup non-fat Greek yogurt, 4 egg whites, 1/2 cup unsweetened almond milk, 3 scoops vanilla whey protein, 1/2 cup applesauce, 1/2 tsp baking soda, 1/4 tsp baking powder, 1 tbsp vanilla extract, 2 tbsp flax seeds, 2 tbsp hemp seeds, and a dash of cinnamon, plus 1/8 cup stevia (optional).
As usual I mixed everything in my Ninja blender and baked them using a sprayed muffin tin for 12-15 minutes at 350 degrees. They really had that bread texture and taste, so next time I think I'll try baking this recipe using a loaf pan. Either way muffins are a lot easier to carry in your purse for emergencies, or just a snack .
